Chicken and Leek Pie

Ingredients:
4 bacon rashers           
3 leeks - finely sliced

6 zucchini - sliced
2 T oil                  
6 chicken thigh fillets, shredded into big chunks
15g extra butter
½ cup grated tasty cheese
Cook bacon and chicken slowly in frying pan. Then gradually add zucchini and leeks.  Don't overcook the greens. Add in the cheese sauce and mix everything together & place in shallow ovenproof dish. Add topping.

Cheese Sauce
45g butter                 
clove crushed garlic
crumbled chicken stock cube
¼ cup plain flour        
2 cups milk
1 cup grated tasty cheese
¼ c grated parmesan cheese

Melt butter in saucepan, add garlic, stock cube & flour.  Cook 1min stirring.  Gradually stir in milk until sauce boils & thickens.  Add cheeses.

Topping - Option1 - 1kg potatoes 
Top with mashed potatoes, sprinkled with cheese or pastry squares topped with poppy seeds - as I have done for something different.    

Topping - Option2 - as per picture
Slices of bread/buttered/with cheese sprinkled over the top

Bake in moderately hot oven until golden brown.
